In our classes we sparred as part of every class after about a week of training. Primarily it was with padded sticks, with the only equipment being goggles for eye protection. There was no such thing as "non-target" areas, but head blows were largely with control (some exception for more advanced students).
Of course our advanced students sparred with live sticks, again with only goggles as safety equipment, and head shots were done with control. We had no serious injuries, just minor cuts and bumps and bruises.
Our target emphasis was on the hands with both padded and live sticks. We chose to make the sparring as realistic as we possibly could, without serious injury.
